High Protein Chickpea Chicken Salad Wraps

Ingredients

  • 2 cups cooked shredded chicken

  • 1 cup chickpeas, lightly mashed

  • 1/3 cup plain Greek yogurt

  • 1 tbsp Dijon mustard

  • 1 celery stalk, chopped

  • 2 tbsp red onion, finely diced

  • 1 tbsp lemon juice

  • Salt + pepper

  • 2–4 high-fiber wraps

  • Handful of arugula or spinach

Instructions

  1. In a bowl, mix chicken, chickpeas, Greek yogurt, mustard, celery, onion, and lemon juice.

  2. Season with salt and pepper.

  3. Spoon into high-fiber wraps and top with greens.

  4. Roll up and serve.
