Loaded Taco Sweet Potato Bowls

A cozy, satisfying bowl packed with protein, fiber, and flavor.

Ingredients

  • 2 medium sweet potatoes

  • 1 lb lean ground turkey or grass-fed beef

  • 1 tsp avocado oil

  • 1 tbsp taco seasoning

  • 1 cup black beans, drained and rinsed

  • 1 cup shredded romaine

  • 1/2 cup cherry tomatoes, chopped

  • 1/2 avocado, sliced

  • 1/4 cup plain Greek yogurt

  • Salsa

  • Fresh cilantro

  • Lime wedges

Instructions

  1. Roast sweet potatoes at 400°F for 35–45 minutes, until soft.

  2. While they cook, heat oil in a skillet and brown the turkey or beef.

  3. Add taco seasoning and a splash of water. Stir in black beans until warmed through.

  4. Slice open the sweet potatoes and fill with the taco meat and bean mixture.

  5. Top with romaine, tomatoes, avocado, Greek yogurt, salsa, cilantro, and lime.
